The start of another week and we continue to food prep our breakfast and lunch. On the menu this week we have veggie breakfast burritos, and for lunch chicken salad pita sandwiches with a side salad.
These easy pita sandwiches are great, full of veggies, fruit, and protein. They hit the spot and keep you full through the busy afternoons at work. On top of that they are easy to make and super flavorful.
Here is what you need!
1 can of chicken drained
2 ribs of celery diced finely
1/2 of a purple onion diced finely
1 gala apple diced finely
1/2 cup fine chopped green leaf lettuce
1/4c. Low fat mayonnaise or miracle whip
Salt and pepper to taste
Small pita breads cut in half
Combine all ingredients well and fill the pita bread. That’s it! Enjoy!
