After a very long week it was nice to sit down, relax, watch a few shows with my husband and why not enjoy a cocktail!
I thought it would be nice to make up something a little different so we made West Side Cocktails. A beautiful mix of citrus, mint, and sparkling water. It really hit the spot! This reminds me of the mint lemonade served at Mediterranean or indian restaurants. A great homemade hard lemonade option.
We enjoy vodka based drinks more often than others because vodka seems to work with a lot of different flavors. Like the tofu of alcohols it allows the other ingredients to shine.

If you want to make a west side cocktail at home here is what you need!
2 oz. Lemon vodka (we used citron svedka)
1 oz. Lemon juice
1/2oz. Simple syrup
Fresh mint leaves
Ice
Tonic water
In a shaker glass add ice, vodka, lemon juice, syrup and mint leaves. Shake vigorously. Strain into a cocktail coupe without ice or like we did a simple short cocktail glass with ice. Top with sparkling water or tonic water. Enjoy!
