
Keto-ing along here, and was looking for a new idea for dinner. Decided to give crustless quiche a try! I love quiche, you can diversify it’s flavors easily, it’s light but still filling, and has tons of flavor!
So tonight I made a mozzarella bacon and spinach crustless keto friendly quiche for dinner!

Here is what you’ll need!
8 large eggs
3/4c. of heavy cream
1/2 c. Chopped cooked bacon
1 medium yellow onion chopped and sautéed in the bacon grease.
2c. Chopped spinach
2c. Shredded Mozzarella cheese
2Tbsp Dijon Mustard
Salt and pepper to taste
Preheat oven to 375°F. Over medium high heat Sautee the chopped bacon until crispy remove and set aside.
Drain off 1/2- 3/4 of the grease from the pan and sautéed chopped onion in the remaining bacon grease until tender.
In a large mixing bowl whip eggs, and cream, add remaining ingredients and stir until well combined. Pour into a pie plate and bake 35min. Until a knife inserted in the center comes out clean. Serve hot, enjoy!

Always do like a crust though …

Me too! But my recent attempts to stick to the ketogenic diet say I should pass this time so I did and this was quite good! I will say I didn’t really miss the crust too much!

That is good. And yes I don’t think the crust is essential, but it depends whether you need a substantial meal or are going for weight loss I guess 🙂 Thanks for the reply, hope you are having a good day …
