Greek Salads with Crispy Roasted Chickpeas!

Happy New Year! I love the start of a new year. Just thought of a fresh calendar year makes me feel better. I’ve been doing some post holiday deep cleaning on the house. Getting laundry caught up and starting to take down some of the holiday decorations! It’s been a busy start to the year!

I don’t really do resolutions but I did set some goals for 2022. As usual one of those goals is focused on losing some weight and getting healthier. I did manage to lose 47 lbs in 2021, I would like to lose another 30-40 this year! So that’s the goal! I also plan to spend more time doing the things that make me happy, spending time with my family and friends, lots of boating adventures and more! What do you have planned for 2022?

To get to my weight loss goals I first got the hubby on board lol! Support is super important and it’s terrible to try to feed two people living together different diets. So we both plan to eat a healthy balanced diet! I prefer to meal prep breakfast and lunch so I have no excuse for reaching for something unhealthy. So today I prepped half a bagel with cream cheese, a boiled egg and fruit of choice for breakfast, and made these fabulous greek salads with crispy roasted chickpeas for lunch! I have the recipe for you below, and I am looking forward to my lunch for the week! For dinner we use Hello Fresh (no financial interest) for 3 of our weekly meals. I also have a seasoned pork roast and whole roasted chicken on the menu this week. Enjoy!

Greek Salad with Crispy Roasted Chickpeas

Here is what you need!

Iceberg head lettuce chopped

Green leaf lettuce chopped

Finely diced red onion

Diced beets

Chopped kalamata olives

Feta cheese

Mozzarella cheese


1 Tbsp olive oil

Salt and pepper

Balsamic dressing

Mild banana pepper rings (optional)

Preheat oven to 400°F. Drain and rinse chickpeas. In a small bowl coat the chickpeas in salt pepper and olive oil. Place in a single layer on a baking sheet and bake in the preheated oven for 12-15mintues until golden brown and crispy.

Layer the lettuces, onion, beets, olives, and cheeses. Top with the crispy chickpeas, optional banana pepper rings, and some balsamic dressing. Enjoy!
