Need a dessert for your holiday party I have the perfect treat! This best ever holiday pumpkin roll will really hit the spot! I use fresh roasted pumpkin but you can also substitute canned pumpkin if you don’t want the extra step.
Each year I decorate with a few heirloom pumpkins and a few pie pumpkins by my back door. After Halloween I take the pie pumpkins, halve them, remove the seeds, drizzle olive oil and salt, pepper over them cover with foil and bake until soft. Once baked I scoop out the meat and blend it smooth in a food processor. This roasted pumpkin mixture can then be frozen for later use. I put mine into 1 or 2 cup baggies in the freezer so I can thaw as much or as little as I need!
Now back to the pumpkin roll! This is my most requested recipe from my daughter Brianna, we made 4 this season and shared with family and friends. I’m pretty sure my husband ate one entire roll on his own lol 😆.
So here is what you need for the best ever Holiday Pumpkin Roll.
For the cake:
3/4c. All purpose flour
1/2tsp baking soda
1/2tsp baking powder
1 tsp cinnamon
1/4 tsp cloves
1c. Granluated sugar
2/3c. Pumpkin puree
1/4c. Powdered sugar
For the filling:
1c. Powdered sugar
1 8oz package of cream cheese
6 Tbsp butter
1 tsp vanilla
For the cake, preheat the oven to 375°F, line a jelly roll pan with parchment paper. In a large mixing bowl combine flour, baking soda, baking powder, cinnamon, cloves, nutmeg and salt. Add the eggs, granulated sugar, and pumpkin puree and mix on medium speed.
Spread the cake mixture into the prepared pan, and bake 14-16 minutes. Once in the oven lay out a lint free kitchen towel and sprinkle with powdered sugar. Set aside until cake is done baking. .
While cake bakes, prepare the filling mix all ingredients on medium high speed until well blended and fluffy. Refrigerate until ready to use.
Remove cake from the oven and turn pan over onto the prepare kitchen towel. Remove the parchment paper and roll the cake up into the towel. Allow to cool completely.
Once cake is cooled unroll the towel and spread the filling evenly over the cake. Roll the cake back up around the filling. Sprinkle with some more powdered sugar. Tightly wrap in plastic wrap and chill. Once chilled slice and serve! Enjoy!!
