
Had a last minute visit with our daughter today. She has been away at college for a few weeks and missed us, and also wanted help doing her taxes lol! But, no matter, I will take a visit with my kids anytime! And since she was home we decided to have an early dinner I decided on a little comfort food for her. So we made Chicken carbonara!

This is one of those recipes that’s pretty easy to make but tastes like you really slaved over it. It consists of chicken, crispy bacon, basil, garlic and creamy sauce. Perfect for a family meal on a winter day! Here is what you need!
1 lb chicken tenderloin cut into bite sized pieces
1/2 pound thick cut bacon chopped
3 eggs
3 Tbsp chopped basil
2 cloves of minced garlic
1/2c shredded parmesan cheese
1 package thin spaghetti
Salt and pepper
I start with the sauce, mix eggs, parmesan, basil (reserve 1 tbsp for garnish) and salt and pepper to taste. Whisk those together until well blended and set aside. Next the bacon. Chop into pieces and sautee over medium high heat until crispy, set aside on paper towel to drain. Reserve 1 Tbsp bacon grease and discard the rest. Sautee chicken in the remaining grease add minced garlic cook until chicken is completely cooked through 5-7minutes. Meanwhile boil pasta in salted water until cooked through. Reserve 1c. of the pasta water before draining the pasta, do not rinse the pasta. Return pasta to the pot and remove from heat allow to cool for a minute or so meanwhile temper the egg sauce with a few tbsp of the hot pasta water. Mix well once tempered pour the sauce over the hot pasta and mix well add more of the pasta water if needed to make the sauce creamy. Add chicken and bacon and toss to coat. Serve hot with basil to garnish. Enjoy!
