Turkey Chili

I used up our leftover turkey on a delicious turkey chili. Keto friendly, and perfect for a cold winter day!

Here is what you need! Enjoy!

1c. Chopped turkey or chicken

1 medium yellow onion chopped

1 head of cauliflower chopped

1 can chicken broth

1 can diced tomatoes with chili’s

8oz cream cheese

1/2c. Sour cream

1 packet white chili seasoning mix

1/4 c. Chopped cilantro

Shredded Cheddar cheese

Salt and Pepper

In a large stock pot. Heat a drizzle.of olive oil add onion, and cauliflower, cook until onions are translucent. Add broth, tomatoes, cream cheese, sour cream and seasoning packet. Heat through until cream cheese melts, and it becomes bubbly and thick, add turkey, and cilantro. Simmer over medium heat 5-10min. Salt and pepper to taste. Top with shredded cheese! Enjoy!
