
Hoppin’John is a lucky new year meal and with my new instant pot it’s easier than ever to make!
Hoppin’John is a simple recipe consisting of blackeyed peas, ham, and rice. A southern dish that originated in the Carolina’s. Although it’s said to be a lucky dish for the new year, noone really knows why. I even consulted with my good friend Google, and no answer as to why this is lucky. But, I’m not taking any chances! Here’s my instant pot recipe for Hoppin’John! Happy New Year and Enjoy!!
1 bag black eyed peas soaked and rinsed
2 cans chicken broth
2 boxes Rice A Roni Long grain and wild rice
1 can diced tomato drained
1lb thick cut ham steaks
Add beans, rice, seasoning packets from the rice, tomatoes, and broth to the pot. Top with the ham steaks. Set for 30minutes on the beans and lentils setting if your pot has one. That’s it! Once cooked, shred the ham and give it a stir! Enjoy!!
