Loaded Cauliflower

Heading into week 3 and I might be getting hang of keto. I am feeling good. Not hungry, and I have good energy so all and all I would give it a thumbs up.

I will say side dishes are the hardest for me. I love my rice, and pasta, and potatoes. And keto says no so I have had to get creative! Tonight with our dinner I made loaded cauliflower. Similar to a loaded baked potato, this hits the perfect side dish notes for me.

Here is what you’ll need to satisfy your side dish craving when your tired of salad on the side lol!

2 medium heads of cauliflower, chopped

1/2c. Sour cream

1 1/2 c. Cheddar cheese, shredded

3 Tbsp. Bacon bits

1/4 c. Green onion, chopped

Salt and pepper to taste

Steam the cauliflower and pour into a serving dish.

Add the sour cream, and 2/3 of the remaining ingredients. Stir until well combined. Top with remaining ingredients. Serve hot! Enjoy!
