Sourdough Cinnamon Muffins

My sourdough starter is really starting to take off now and I have started to use some of the discard portions for small recipes. I think this one might one of my favorites and it’s super easy to make!

This simple lightly sweet cinnamon muffin can be put together in a flash and with a little melty butter is the perfect yummy treat you were hoping for! You can really taste the spices which is great, and the whole wheat flour adds a nice crumb texture to this muffin.

Here is what you need:

1 1/2c. Whole wheat flour

1 tsp. Baking powder

1/2 tsp. Baking soda

1/2c. Brown sugar

1/2c. Granulated sugar

4 Tbsp melted butter

1 egg

1 tsp vanilla

1/4c. Milk

1 c. Sour dough discard unfed

Preheat the oven to 375°F. Mix together dry ingredients, add butter egg vanilla and milk mix well on a low speed. Fold in sourdough starter by hand. Scoop into muffin wrappers and bake for 10-15 minutes until a skewer comes out clean. Serve warm with a little butter, enjoy!!
