Teriyaki Meatballs

This weeks prepped lunch box is a serving of delicious teriyaki meatballs, with lemon rice, and steamed broccoli.

These tasty meatballs are made with low fat ground beef, and baked for a healthy mid day bite! Teriyaki sauce and a couple of simple sides adds a nice warm flavor that really hits the spot.

Here is what you need for Teriyaki Meatballs:

1lb ground low fat beef

1 bunch of green onions chopped

1/4c. Panko crumbs

1 egg

1 tsp low sodium soy sauce

2 dashes Worcestershire sauce

Zest of half of a lemon

Salt and pepper

Teriyaki sauce

Preheat oven to 425°F. Mix all ingredients in a large bowl except teriyaki sauce. Use a medium scoop to make 1-2″ balls. Place on a greased baking sheet. Baste with a generous amount of teriyaki sauce. Bake for 15-18min until browned and cooked through. Remove from the baking sheet and toss in a large bowl with more teriyaki sauce.

Serve with lemon rice and fresh steamed broccoli. Enjoy!
