
Christmas was fantastic! It was so nice to see the family and gather together to celebrate. We were reminded how fortunate we are to have such a big loving family! I hope your holiday was a good one too! And now that the celebration is over like many we have a ton of food leftover! So, I went to work in my kitchen and for lunch today we enjoyed some mashed potato cakes and ham. This is an easy flavorful way to jazz up left over mashed potatoes!

I also incorporated some of the brussel sprouts with bacon in this recipe. So be creative and use those tasty next day sides to make this fresh delicious brunch dish!
Here is what you need:
1-2 c leftover mashed potatoes
1/4c. Flour
1 egg
1/4c cheddar cheese
2 Tbsp sour cream
Optional 1 c. Finely chopped left over bacon brussel sprouts or vegetable side of your choice!
2 Tbsp onion soup mix
Salt and pepper to taste.
Mix all of the ingredients together spoon into a hot lightly greased pan. Use the spoon to flatten the mixture in the pan. And allow to cook over med-high heat until lightly browned turn and cook on the other side. Serve hot with a side of ham or top with your choice of meat or vegetables!
