Creamy Zucchini Sauce

I have a couple more zucchini recipes to share before I move on to a fall series on soups and stews! I thought I’d share and easy and delicious creamy zucchini sauce recipe. This is a versatile sauce that can be served over rice or pasta, you can mix in chicken or stew meat to change it up a little. Or serve your zucchini sauce or zucchini noodles for a powerful vegetarian dish!

Here is what you need:

2lbs zucchini chopped

1Tbsp smoked paprika

2 Tbsp Extra Virgin Olive Oil

1c. Coconut milk

1/8c parsley chopped

1/8c. Basil chopped

1 Tbsp tomato paste

2 cloves of garlic

Salt and pepper to taste

Optional 1/2tsp red pepper flakes

Preheat oven to 400°F Coat zucchini in olive oil and paprika and spread onto a large sheet pan. Roast until tender.

In a large sauce pan add remaining ingredients, heat through and add the roasted zucchini. Simmer for 3-5minutes on medium heat, serve over rice or pasta. Enjoy!!
