Welcome to the new year! For our first big meal of 2021 I put together a simple and healthy Mediterranean style chicken bowl! I love the freshness of Mediterranean cuisine. It’s light flavorful and it’s easy to make your own versions of the cultures famously delightful food!
Coupled with some crispy onion pita chips this really hit the spot tonight. Here is what you need!
1 lb chicken tenderloin cut into bite size chunks
1 medium yellow onion
1 Tbsp olive oil
3 cloves minced garlic
2 small zuchini chopped
1 can chickpeas drained and rinsed
4 Tbsp flat leaf parsley chopped
1 small container plain greek yogurt
1 Tbsp dill seasoning mix
Halved grape tomatoes
Onion flavored pita chips
In a large saute pan heat oil and add chopped onion. Once tender add chicken, garlic, chickpeas and zucchini. Saute until chicken is cooked through. In a small bowl mix yogurt, dill seasoning and parsley set aside.
Once chicken mixture is cooked through place in a bowl and top with olives, tomatoes, feta cheese, and yogurt dressing. Add a few chips on the side. And enjoy!!
