Pumpkin Bread

I roasted some pumpkin today to freeze for holiday baking. And decided to make a quick and easy pumpkin bread while I was at it!

Pumpkin bread is such a nice warm fall flavor. It’s a whole mood lol! Here’s what you need!

2c. Whole wheat flour

1.5c. Granulated sugar

2 tsp baking powder

1tsp baking soda

2 tsp. Cinnamon

1 c. Oil

3 eggs

1.5c. Fresh roasted pumpkin or 1 15oz can pumpkin puree

Preheat oven to 350°F prepare a loaf pan with a parchment paper liner in the bottom and grease the sides lightly. Set aside.

Stir together dry ingredients. Add eggs, oil, and pumpkin. Mix on low until well combined.

Pour mixture into prepared pan and bake 30-40min until a knife inserted comes out clean. Allow to cool remove from pan and slice for serving. Enjoy!!
