Huevos Rancheros

My next breakfast recipe is a popular Mexican dish Huevos Rancheros or “Rancher’s Eggs” this is a light, super flavorful, health way to start your day. I highly recommend you give it a try. Most recipes you find online will have the eggs sunny side up, I personally need my eggs cooked just a bit more and prepared mine over-medium. So don’t be afraid to prepare the eggs as you see fit, after all you are the one that has to eat it! You can even modify this into a Huevos A la Mexicana and scramble the eggs if you prefer!

Some recipes will also call for refried beans, I chose not to include that in this recipe but if you’d like to give it a try just spread the warmed beans on the tortilla before topping with the additional ingredients.

I love Pico de Gallo as well and sometimes adding a bit of the fresh pico to this recipe can give it a little zip as well… So many great things you can do to make a recipe like this your own!

Here is what you’ll need, for my version:

2 large fresh tomato seeded and chopped ( You can use canned tomatoes just keep in mind this will shorten the cook time)

1/2 of a pablano pepper chopped

1 small onion chopped

1/4 tsp ground cumin

salt and pepper

1 Tbsp olive oil

1 lb breakfast sausage

4 white corn tortillas

4 eggs

butter

chopped cilantro (optional)

In a large pan heat the olive oil add onion and pepper cook until tender add tomato, salt pepper and cumin. Cook on Medium heat until vegetables are soft and everything is blending together. place on a low setting to keep warm and set aside.

In a new pan brown breakfast sausage remove from pan and set aside add butter to pan and add eggs. I prepare mine over medium, turning once. Remove eggs from the pan and place tortillas in the pan to warm them until pliable.

Assemble. place a small amount of the cooked salsa on the plate top with tortilla, eggs, sausage, and more of the warm salsa. Serve hot, and enjoy!
