Apple Blueberry Fritters

My blog presence this year has a bit to be desired. I start and stop and start and stop, and so here I am again apologizing for my delayed content… But, I have great news! I have a whole bunch of stuff to upload for you over the next couple weeks. I’m going to start with my Breakfast series continuation, and what better way to kick things back off than with a homemade donut! I enjoy donuts but if I’m being honest it’s not my all time favorite breakfast food. After eating a donut for breakfast I feel over full and on a bit of a sugar rush, but as an occasional treat it’s a nice option. If I do have a donut for breakfast I tend to lean toward simple ones like bear claws, or fritters. So today I bring you a special treat with this recipe for a fruit packed Apple Blueberry Fritter.The sweet apples paired with the slightly tart blueberries in a lightly fried batter and topped off with a simple glaze makes this a sweet simple treat. Enjoy!Ingredients:1c. All-purpose Flour1/2 tsp. cinnamon1/2 tsp salt2 tsp baking powder2 cups Gala apples peeled and diced1 cup fresh blueberries3 Tbsp granulated sugar2 Lg eggs1/4c whole milkFor Glaze:1 1/4c confectioners sugar1/4tsp vanilla3-6tsps waterVegetable oil for fryingIn a medium bowl whisk together Flour, cinnamon, baking powder, saltIn a separate bowl with a hand mixer blend sugar and eggs together on medium speed until light and fluffy. Add flour mixture on low speed until just blended once starting to incorporate add milk and whisk together until all combined.Fold in apples and blueberries.Heat oil in a deep pot until 375F. Drop 1.4cup of batter into the hot oil and let fry until golden brown. Turn and cook both sides, test for doneness. Once golden brown and cooked through remove from oil onto a paper towel lined baking rack. Pour glaze over the cooled donuts and serve warm! Enjoy!
