Beginner’s Guide to Thanksgiving Dinner ~ Mashed Potatoes

Mashed potatoes are a Thanksgiving holiday staple and I certainly couldn’t do a beginner’s guide without giving you a creamy delicious mashed potato recipe. These are perfectly paired with homemade turkey gravy!

I use Yukon gold potatoes for a couple reasons. First they are a nice large semi hard potato. I find they cook very evenly and have great flavor. Second Yukon gold potatoes have a glycemic index that is easier on diabetic family members so they can enjoy this carb filled holiday with a little less guilt and worry.

Potatoes seem like they would be the easiest of side dishes but they can be a little tricky. If you over cook them they can be to soft amd become gummy, and of under done you’ll have lumpy potatoes. There is a delicate balance here!

Here is what you need for perfect creamy mashed potatoes!

  • 4cups pealed and chopped yukon gd potatoes
  • salt
  • Pepper
  • 1/4c Sour cream
  • 2 Tbsp cream cheese
  • 1/4c. Chicken broth
  • 1/4 c. Melted butter

In a large stock pot boil potatoes in lightly salted water. Check frequently for doneness. Drain and rinse. Add melted butter, broth, sour cream, cream cheese, and salt and pepper to taste. Blend together with a handheld mixer on low speed until potatoes are well blended. Don’t over mix or mix on high speed as the starches will breakdown and potatoes will become “gluey” . Serve hot, enjoy!
