Lighting up a room

Sometimes all you need is a great light fixture to add something special to a room. @kathykuohome shared this gorgeous pic on instagram and I keep noticing so many great things about it.

The subtle patterns mixed in, the pops of green color, and great art! But I really love this chandelier! Light fixtures can make all the difference ina room, and when remodeling or redesigning consider the impact they can have! They can make a small room seem large and bright or bring down the scale to make a warm cozy spot in your home. This one just really sings to me! What do you think?

Kind of fancy for a Wednesday!

I am almost done transferring my content from the other blog!
First of all, no I will not be posting daily through your 2017! It just seems lately that I’m in the mood.

So what’s for dinner? Glad you asked! Tonight is a family favorite, a simple seafood pasta. It looks beautiful and is super tasty 😋. Perfect for a night with kids or as a filling passing dish!

Here’s what you’ll need:

4 cloves minced garlic

1/4 c. Butter

Two packs of imitation crab meat

A small bag of precooked and deveined shrimp (approx.20 large shrimp)

1 box of fettuccine

One head of broccoli chopped

Salt and pepper

Shredded Parmesan cheese

In a frying pan add butter, garlic, crab and shrimp (tails removed) and heat through but don’t cook too long or shrimp will become tough and the butter won’t coat the pasta properly, set aside.

In a large sauce pan cook fettuccine and add the broccoli for the last couple minutes of cooking to get a good blanch on them. Drain and return to the pot. Stir in crab mixture sat and pepper. Plate up and top with Parmesan cheese!

I usually serve this with garlic bread. Delish, Enjoy!!

Taco Tuesday…Well Sort Of

I love mexican-american food! I phrase it that way because what I make is nowhere near authentic Mexican cuisine which is amazing, and deserves kudos in it’s own right! I was craving something a little spicy tonite and it’s Tuesday so what else Tacos! But….I got distracted whilst shopping and ended up putting together a plan that turned into something more like Fajitas!! Lol

Something about a nice warm tortilla filled with cheesy, spicy, yummy stuff that just makes my night!

Here’s what you’ll need!

1 pound chicken tenders cut into bite sized pieces

2 Tbsp olive oil

2 Tbsp taco seasoning

Salt pepper

1 green bell pepper diced

1 yellow bell pepper diced

1 medium onion diced

1 sm can mild jalapenos drained

Flour tortillas

Shredded cheddar cheese

Sour cream

In a medium pan add olive oil and cook chicken through once cooked add seasoning salt and pepper and set aside in a saucepan add peppers onions and jalapeno cook until crisp tender over md-high heat. Once cooked through add chicken, stir and serve hot!

Top a warmed tortilla with chicken mixture, cheese and sour cream! Enjoy!!

The impact of scale

I first found this pic on instagram c/o @drivenbydecor and I really like it. A nice master suite, great colors, and patterns  very classy…then it hit me.

Look at the size of the plant sitting on the side table! It’s huge!

Don’t get me wrong, I love it but Wow!

Just goes to show you how much of a difference variation in scale can make in your decor!

Monday #1

Already struggling this year to think of things to make for dinner, and I hate to supply you with a repeat performance but….breakfast for dinner is so good!

And since it’s been two days and I’m still not a morning person what could be better! I used Betty Crocker’s pancake recipe and doubled it for my family, a side of scrambled eggs, served up family style is the perfect combo on this laid back evening at home.

Here is the recipe as I prepared it, the link to Betty Crocker’s site is in my post from September 4th, 2016.  Enjoy!!

2 c. Flour

2 Tbsp granulated sugar

2 Tbsp baking powder

0.5tsp. Salt

4 Tablespoons vegetable oil

2 eggs lightly beaten

Lightly beat eggs and then stir in remaining ingredients until flour is moistened , it may be slightly lumpy.

Heat griddle over medium high heat and coat with non-stick cooking spray.

Pour 1/4 c. of batter onto the hot pan, wait until bubbles form and edges appear dry before turning.

Quick and Easy Chicken Pot Pie

I was looking for an easy peasy new year’s dinner solution and decided on Chicken pot pie. It may not sound like an easy recipe but I used a few short cuts and the results are outstanding!

Here’s what you need,

Pre-made pie crusts, a rotisserie chicken, two cans of mixed veggies, one can of cream of chicken soup, and one bag of precooked diced potatoes, salt and pepper to taste, and one egg. That’s it!

In a saucepan heat potatoes, veggies, soup and chicken (remove bones of course) Heat through. Place lower crust in pie pan add chicken mixture, and add top crust, seal the edges and top with egg wash. Bake uncovered in 375F oven for 30min. or until crust is golden brown. Serve hot!

This is a great no fuss dinner that fills you up! Enjoy!!

Happy New Year!

Another New Year with a fresh start and some amazing possibilities!

I love the new year holiday, it fills me with the hope of dreaming bigger dreams, and being a better person than the year before.

So let’s get right to it! Resolutions!! I have to be honest in that I have never really had a new year resolution before. This year though I contemplated the things holding me back from some of my greatest achievements, and I’m making some changes! Gonna need some coffee for this one.

I am going to turn myself into a morning person. For those who know me try to hold off on the hysterical laughter… I want to find a way to enjoy my early mornings. I plan to get up daily at 6:30am, early but not too early lol. A cup of coffee and a quiet moment to review my plan for the day ahead. This comes to my second resolution, getting organized…again try to stop laughing 😁.

Since this is a bit of a confession here it goes. I procrastinate…a lot. I always seem to think I can get to it later and then my mind jumbles up with a hundred other things and the first task gets lost in the fray. So no more of that this is the year of getting things done, and getting them done now!

Lastly, I’m going to do more of what I love. I’m going to cook, and bake, and Garden, and read good books. I’m going to find my way back to feeling like me again, I’ve been a little off my game the past couple years, maybe for good reason, but maybe not and I intend to make myself whole again.

I started already with a nice update on the house. Our main family room got a much needed upgrade and I’m feeling great about this fresh new zone I’m in.

So here’s to a happy new year! For all of us! Talk to you all soon!!
