My mother in law Meri Beth had a wonderful idea this Christmas to host a pot luck dip party for this years family get together. Everyone made something a little different from sweet to savory there was something for every palette.
I made two dips for the party the first was cobb salad dip you can find that recipe in one of my earlier posts. The other was a variation of my cousin Terra’s famous cookie dough dip! My kids love this dip, and it’s so easy to make!
Here’s what you’ll need
2 Tbsp butter
1 8oz. Package of cream cheese
1/4c. Light brown sugar
Pinch of salt
1/2c. Powered sugar
1 c. Mini semi-sweet chocolate chips
Blend together all of the ingredients and fold in the chocolate chips. Chill for about 20-30min. Serve with graham crackers for dipping. Enjoy!
While vacationing with friends this past weekend we found ourselves with some left over corn on the cob, so what better to make than some fresh corn salsa!
This is a great ready to eat snack dip that we could leave out and enjoy throughout the evening. It has a little spicy kick but not too much and will surely keep you coming back for a little more.
Here’s what you need.
4 ears of corn cooked and cut from the cob
1 md yellow onion chopped
1 lg green bell pepper chopped
1 sm tomato diced
1 sm jalapeno finely chopped seeds removed
1 bunch of cilantro chopped
Salt and pepper to taste
1 bag tortilla chips for dipping, Tostitos scoops work great!
Take all of your chopped ingredients and toss together, it’s just that easy! I think if I had one available I would have added a squeeze of lime juice, and maybe a little garlic but just as it was it tasted great! You could also add avocado or black beans if you need something a little more filling. A lot like pico de gallo but with fresh corn. So good! Enjoy!
I love to entertain! We host regular get togethers with some of the most amazing friends and family and now and then I’ll whip up a quick dip, or snack to enjoy with them!
Last night was no exception our “barn league” spring training tournament took place it was a ton of fun!
I made a quick tasty Cobb salad chip dip. Here’s what you’ll need.
2 pkg cream cheese
1/2 c. Sour cream
1/4 c. Ranch dressing
1/4 c. Blue cheese crumbles
1/2c. Cheddar cheese shredded
1/2 c. Crumbled bacon
In a large mixing bowl blend the cream cheese, sour cream, and ranch dressing
Spread this into the bottom of a glass pan, layer the remaining ingredients on top. That’s it!
I serve it with corn chips or tortilla chips. So yummy and the perfect treat for a group to share. Enjoy!
